1 1/3 cups flour
1/2 cup vegetable shortening
1/2 teaspoon salt
3 tablespoons ice water (the colder, the better)
other stuff you'll need:
a pastry cutter, or two giant spoons

rolling pin/tall glass
9 inch circular/square baking pan
directions:
mix the flour and salt in a bowl. cut the shortening into the flour/salt mix with two spoons. using your fingers will melt the shortening and not create the right texture. if you mix it with your hands, the dough will bake to be really heavy and won't be flaky and delicious. hands off.
the mixture should resemble teeny pea-sized balls. add the ice water and continue to mix this. roll the dough into a ball and put this in the fridge for 1/2 hour. remove dough from the fridge and put a little flour down. roll this out into the desired shape and gently place it into the pan.
zucchini quiche ingredients:
5 extra large eggs
1/2 cup of cream/milk
3 small zucchini, quartered and sliced thin
2 tbsp butter
1/2 cup cheese of choice, shredded
1 tsp salt
other stuff you'll need:
skillet/saute pan
wooden cooking utensils
wire wisk
medium/large bowl
directions:
place butter in skillet/saute pan on medium heat. add zucchini to pan. let this cook for about 5-10 minutes.
crack eggs in bowl. whisk this together with the salt and pepper. add cream/milk and cheese. continue to wisk this together. add in cooked zucchini and give it a good mixin. pour this into your unbaked pie crust and bake at 350 degrees for 30-35 minutes.
serve hot.

crunchy scotchies

3 cups butterscotch chips
10 oz. chinese noodles
other stuff you'll need:
wax paper or tin foil
2 soup-size spoons
microwaveable glass bowl
directions:
melt the butterscotch chips in a glass bowl in the microwave 30 seconds at a time, stirring until they are completely melted. add the chinese noodles to the melted chips and mix well. use your two spoons to drop spoonfulls onto the waxed paper/tin foil. let these cool until they harden.

*this is another family recipe. broccoli rabe, or rabes [pronounced 'rah-bees'] are an acquired taste. as a kid i hated their bitter qualities, but they've since grown on me. they can be easily found in the produce section, usually toward the back behind broccoli and fresh spinach. if you don't like the taste of this veggie, you can substitute normal broccoli at the risk of losing italian street cred.
ingredients:
1 package of chicken sausage (sweet, garlic, or hot works with this)
1 bunch of broccoli rabe
1 lb pasta
about 1/2 cup olive oil
3 cloves garlic
red pepper flakes (to taste)
salt (to taste)
other stuff you'll need:
pan
skillet
strainer

directions:
wash your broccoli rabe. cut off any ends which are larger than the width of your pinkie finger (they'll be too tough to eat). boil water in a pan large enough to hold your rabe on high. add uncooked rabe and allow it to blanche for about 10 minutes in boiling water. doing this makes your broccolini tender and also makes sure that it will stay bright green. drain these and set aside.
chop your three cloves of garlic into semi large pieces (or if you want to be fancy, we call it rustic) and put this in the bottom of a skillet with a small drizzzle of olive oil over medium heat. here's where you can add the red pepper flakes, more means spicier. let the oil/garlic/red pepper do it's magic in the pan for about ten minutes. cut up your chicken sausage and add this to your garlic-infused oil. allow this to cook completely, flipping your slices over periodically.
while that's cooking, boil enough water to make pasta the usual way. while that's heating up, add your cooked rabes to the sausage and oil pan. cook and drain your pasta, adding it back to the pan which you used to cook it in. add the 1/2 cup of olive oil to this pan, putting it back onto low heat. mix in the cooked sausage and rabes, season to your liking and eat.

pistachio pudding cake

*my best friend's mom gave me this recipe this summer and i've made it twice since.
ingredients:
2 packages of instant pistachio pudding mix
1 package white cake mix
3 eggs
1 cup club soda
1 cup veg oil
1 1/2 cups cold milk
1 tub cool whipshortening to grease cake pans
other stuff you'll need:
2 round cake pans
mixing bowls
spatula
cake plate
shortening to grease cake pans
directions:
blend everything together except for 1 pkg of pudding and the cool whip. mix together hardcore for 2 minutes or until your arm is tired. make sure there's no air pockets or lumps.
grease both cake pans with a good amount of shortening. heat oven to directions on cake box. pour batter into the two cake pans evenly.
bake at same heat/time as indicated on the cake box. when done, let both cakes cool.
mix the cool whip and remaining package of pudding mix together. use this in between both cakes and to frost the cake.

11 cups low-salt chicken broth
4-6 sprigs thyme
2/3 cups dried pastina pasta (tiny pastas. ABC ones count).

knife

directions:

coconut caramel chews

5 ounces soft caramel candies (about 24 pieces)
1/2 cup dry unsalted peanuts
1/4 cup white chocolate chips
1 1/4 cups sweetened coconut flakes
vegetable cooking spray
other stuff you'll need:
microwave
1 zippered bag
1 8x8 microwave safe dish
1 roll of plastic wrap
1 medium sized microwave safe bowl
1 sharp knife
utensil with the ability to smooth things
directions:
line the microwave save dish with plastic wrap completely (more than one sheet over each side, cheapo) and tuck the ends over the sides of the pan. spray the wrapped dish with cooking spray.
put the peanuts inside of the zippered bag and smash it around a lot. get the peanuts as crushed up as you'd like. if you have a food processor, feel free to use that.
spray the microwave safe bowl with cooking spray and add the caramels (unwrapped), peanuts, white chocolate, and 1/2 cup of the coconut. stir it around before microwaving and then nuke it for 1 minute on high, stir, and nuke again for 30 seconds on high.
quickly spread this into the first pan (the one you wrapped), flattening the mixture as evenly as possible. cover this with the remaining coconut (do it quick, before it completely reforms).
let the candy cool and use a sharp knife to cut it into one-inch squares. enjoy.

directions:
combine the tomatoes, corn, onion and avacado in a large bowl. mix dressing ingredients in a seperate bowl, pour over the salad and toss it up.
raspberry coconut bars
difficulty: EASY PEASY LEMON SQUEEZY

ingredients:
1 1/4 cup flour
1/4 tsp salt
1/2 cup (1 stick) butter, cut up and warm
3 tsp water (cold)

1/2 cup sugar
1 pkg coconut (7 ounces)
1/3 cup raspberry jam
other stuff you'll need:
oven
mixing bowl
9 inch square baking pan
fork
wire whisk (optional)
directions:
preheat your oven to 425 degrees.
take the butter out of the fridge and let it sit on the counter for about 20 minutes. if you get annoyed waiting or are dealing with little time to partydom, you can melt it in the microwave and use it in the flour/salt mix.
mix flour and salt in a bowl. slowly add butter to this mixture. until it resembles cookie crumbs. gradually add the water, stirring it all with a fork until well blended. press this into the bottom of an ungreased sqaure baking pan and bake it for 20 minutes. be careful and make sure that it doesn't burn or else it will taste like crud.
after you take the pan out of the oven, reduce the heat to 350 degrees.
crack eggs into a bowl and beat them until they are frothy. add the sugar slowly and keep beating it until it's thick and lemon-colored. stir in the coconut carefully.
spread the raspberry preserves over the crusty-mixture that you just baked but be careful not to get too close to the edge (if you do, it will burn to the pan and be a pain to clean later). over this, spread the egg/coconut mixture over the whole thing.
bake this for 25 minutes (or until the top gets golden brown). after it comes out of the oven, let it cool for about 30 minutes and then cut them into bars.

as a financially poor, yet personally rich graduate student, finding cheap yet toothsome (look it up, roget) meals is a must.
while watching specific food-related television stations made me yearn to cook, somehow making roasted garlic, feta and walnut dip on a whim wasn't so inviting to my wallet.
here i will share recipes and ideas about how to spread your dinner dollar out.
getting invited to soirees is great, yet i tend to cringe when thinking about what to bring. i hope that this blog will help readers discover lazy, simple and cost-effective ways of entertaining.
